Meatball Mezze

Gather your family, friends or neighbors and tuck into this savory meatball mezze made with a selection of tasty tidbits: baked bison meatballs, three-beet hummus, Greek cheese, sauerkraut, artichokes, and a probiotic dipping sauce made with sour cream. Place a few of these items or all of them on a platter and watch everyone’s face light up at the dinner table. Homemade hummus or shop bought? Your choice, but either way, if your hummus is sprouted you can’t go wrong.

Ingredients
-
1 1/2 tsp. Dr. Cowan’s Garden Organic Three-Beet Powder (for hummus)
- 1 cup sprouted hummus (homemade or store bought)
- 2 eggs, beaten
- 1/3 cup milk
- 2 Tbsp. sourdough breadcrumbs (optional)
- 2 lb. ground bison meat

2 tsp. Dr. Cowan’s Garden Organic Turmeric Powder

2 tsp. Dr. Cowan’s Garden Summer Savory Powder

2 tsp. Dr. Cowan’s Garden Organic Threefold Blend Powder - Savory

2 tsp. Dr. Cowan’s Garden Ashitaba Powder

2 tsp. Dr. Cowan’s Garden Dandelion Powder

2 tsp. Dr. Cowan’s Garden Organic Pepper Salt (meat)
-
2 Tbsp. Dr. Cowan’s Garden Pluck All Purpose Seasoning (meat) PLUS 1/2 tsp. (dipping sauce)
- 1 packet halloumi cheese, pan-fried, or crumbled feta cheese
- 1 cup organic full-fat sour cream

Dr. Cowan’s Garden Jaya Raw Fermented Probiotic Hot Sauce
- 1 cup sauerkraut or kimchi
- warm flatbread (optional)
- artichoke hearts (optional)
Directions
Preheat oven to 350 degrees F.
- In a small bowl add three-beet powder to hummus; mix well and set aside.
- Combine eggs, milk and sourdough breadcrumbs together in a medium bowl and let it rest while you prepare the bison meat.
- Place ground bison in a large bowl.
- Add vegetable powders to the meat and combine well.
- To the meat mixture, add the egg mixture and combine well.
- Divide into small golf-ball sized meatballs.
- Place meatballs on a sheet pan with parchment paper.
- Bake meatballs for approximately 20 minutes or until cooked throughout.
- Cut halloumi cheese into small bite-size chunks.
- Use moderate to high heat and pan-fry halloumi for a few minutes until golden on each side.
- Arrange meatballs, halloumi or feta, hummus, artichokes, and warm flatbread, on a large plate and serve with dipping sauce.
Probiotic Dipping Sauce
To 1 cup of sour cream add a few drops of Jaya Raw Fermented Probiotic Hot sauce.
- Stir in the remaining 1/2 tsp of Pluck All-Purpose Organ-Based Seasoning.
- Garnish sauce with an additional pinch of turmeric powder, if desired.
