Kimchi Shrimp Fried Rice

Try eating all the colors of the rainbow in this simple meal. I like to sprout the rice and legumes overnight, which shortens the cooking time. For added flavor, marinate the shrimp with a tablespoon of Pluck All-Purpose Organ-Based seasoning, overnight in the fridge or for a couple of hours, before you sauté them with the peppers, onions, and garlic. Serves 2-3.

Ingredients
- 1 cup Dr. Cowan’s Garden Charleston Gold Aromatic Brown Rice
- 1/2 cup cooked mung beans or lentils (optional)
- 1 red pepper, diced
- 1 yellow pepper, diced
- 1 green pepper, diced
- 1 shallot or 4 green onions, peeled and sliced
- 3 cloves garlic, crushed

3 Tbsp.
Dr. Cowan’s Garden A2/A2 Ghee
- 4+ Tbsp. water or bone broth (optional)
- 1lb of shrimp, peeled and de-veined

1 Tbsp.
Dr. Cowan’s Garden All Purpose Organ-Based Seasoning

1/2 tsp.
Dr. Cowan’s Garden Pepper Salt

1 tsp. Dr.
Cowan’s Garden Wild Ramp Powder
-
1/2 tsp.
Dr. Cowan’s Garden Organic Turmeric Powder
-
1/2 tsp.
Dr. Cowan’ Garden Organic Three-Beet Powder

1/2 tsp.
Dr. Cowan’s Garden Organic Threefold Blend Powder - Slightly Sweet
- 1 tsp. Dr. Cowan’s Garden Organic High-Protein Leaf Powder
- 3 Tbsp. kimchee
- broccoli sprouts (optional)
Directions
Cook rice according to packet instructions.
Cook the mung beans or lentils according to packet instructions.
Remove the stalk and seeds from the peppers and dice.
Peel and chop the shallot.
Peel and crush the garlic cloves.
Add the peppers, shallot, and garlic to a heated pan with ghee, and sauté for a few minutes until slightly tender.
Add a few tablespoons of water or bone broth so the vegetables don’t stick to the pan and continue to stir.
Add the shrimp, or protein of your choice, and stir for a few minutes until they’re fully cooked and no longer pink.
Add the cooked rice, mung beans or lentils, vegetable powders and seasoning, and stir until all the ingredients are mixed.
Remove from the heat.
Mix in the kimchee.
Garnish with broccoli sprouts and serve immediately.
