Sweet And Savory Potato Salad

Add some sizzle to your summer with this sweet and savory potato salad. Whether you’re looking to create the perfect picnic plate or need a side to go with your juicy BBQ steak or smoked salmon, this salad is up for the job. Just grab some sweet potatoes, regular potatoes, or a combination of both, sour cream or mayonnaise, and a few vegetable powders, and voila! You have a delicious salad that you can enjoy warm or chilled.

- 1 large sweet potato or regular potato, peeled and diced
- 2 Tbsp. sour cream
- 1 tsp. mustard
- 1/4 tsp. Dr. Cowan’s Garden Organic Dandelion Powder

tsp. Dr. Cowan’s Garden Threefold Blend Powder - Savory

tsp. Dr. Cowan’s Garden Threefold Blend Powder - Slightly Sweet

tsp. Dr. Cowan’s Garden Wild Ramp Powder
- broccoli sprouts (optional)
- watermelon radish (optional)

tsp. Dr. Cowan’s Garden Organic Three-Beet Powder, for garnish
Directions
Peel the potato and dice it into small chunks.
Steam the potato chunks for 20-25 minutes or until cooked and set aside.
In a bowl add sour cream, mustard, dandelion, pepper salt, threefold blend powders, and wild ramp powder.
Add the cooked potato chunks and briefly stir until they’re well covered.
Serve with broccoli sprouts and thin slices of watermelon radish, and garnish with beet powder.
Recipe Note
Tip: To enhance the taste, I sometimes like to switch things up and use roasted herb potatoes instead of steamed ones.
