Smashed Mackerel

Have you tried smashed mackerel? It’s a tasty way to enjoy mackerel when you fancy a quick lunch or snack. Take some mackerel fillets, add seasoning, red onions, plenty of cream cheese, and mix it together. Serve it with a salad, crackers, or a baked potato. I normally find a 225 g (8 oz.) jar of skinless and boneless fillets makes enough for 2 servings.

Ingredients
- 1/2 cup diced red onions (1 small onion)
- I jar or can of mackerel fillets, cooked

1/2 tsp. Dr. Cowan’s
Garden Pepper Salt

1 tsp. Dr. Cowan’s
Garden Organic Leek Powder
-
1/2 tsp. Dr. Cowan’s
Garden Organic Root Medley Powder
-
1/4 tsp. Dr. Cowan’s
Garden Sea-Vegetables Powder
- 3 heaping Tbsp. full fat cream cheese
- 1 Tbsp. fresh lemon juice
- 1 tsp. pink caviar, garnish (optional)
Directions
Peel and dice one small onion.
Drain water/oil from a jar or tin of skinless and boneless mackerel fillets, and place into a medium size bowl.
Add diced onions, pepper salt, leek powder, root medley powder, sea-vegetables powder, cream cheese, and lemon juice.
Use the back of a fork and smash all the ingredients together.
Mold the mackerel into the shape of a medallion, or simply place it on a plate.
Garnish with caviar or light dusting of your favorite vegetable powder.
Serve immediately with your favorite side or leave in the fridge to chill until you’re ready to serve it.
Recipe Note
Tips:
If you’re using canned mackerel in olive oil, drain off the excess oil.
