Chinese Coleslaw

If you’re up for a crunchy, savory, sweet, and tangy Asian style coleslaw, grab your cheese grater, roll up your sleeves, and start grating. You won’t need any mayonnaise for this recipe, but you will need some cabbage, a Chinese pear, fennel, celery, and a deliciously simple dressing to pour over your vegetables.
Asian pears are crisp, sweet, and very juicy. If you make a larger batch of coleslaw, you might want to use the whole pear, otherwise half a pear is more than sufficient. If you can’t get hold of any Asian pears, use a regular pear or Granny Smith apple instead. Garnish your coleslaw with a handful of black sesame seeds or crushed almonds and serve with your meal.

Ingredients
- 1/2 small green cabbage, grated
- 1/2 Asian pear, thinly sliced
- 1/2 medium fennel bulb, grated
- 3 celery stalks, shredded or thinly sliced
- 3 green onions, thinly diced

Pepper Salt

1/2 tsp. Dr. Cowan’s Garden Organic Root Medley Powder
- Dr. Cowan’s Garden Crispy Sprouted Organic Almonds
- black sesame seeds, garnish (optional)

1/2 cup Dr. Cowan’s
Garden Olive Oil
- 1 Tbsp. sesame oil
- 1 tsp. fresh ginger, grated
- 5 Tbsp. sherry vinegar or favorite vinegar
- 1 tsp. honey or maple syrup (optional)

Directions for coleslaw:
Grate half a cabbage.
Thinly slice half an Asian Pear.
Remove the root end of the fennel bulb, cut it in half, and grate it.
Thinly slice 3 celery stalks.
Thinly dice 3 green onions.
Add vegetables to a bowl.
Add Ashitaba powder, Wild Ramp, Pepper Salt, and Root Medley powder and mix.
Directions for dressing:
Add all the ingredients to a small cup or bowl and stir.
Pour dressing over the grated vegetable mixture.
Scatter a handful of crushed almonds on top of the coleslaw, sprinkle with black sesame seeds, and serve with your meal.
