Better Pyttipanna

Create your own version of this popular Swedish dish with the help of organic three-beet powder, high-protein leaf powder, and a host of other goodies. Pyttipanna typically includes pickled beet, leftover meat, potatoes, onions, and an egg. The best part about preparing this meal from scratch is that you have the freedom to use any cut of meat along with your favorite root vegetables to create a mouth-watering mid-week meal with minimal effort.

Ingredients
- 1 medium onion, peeled and diced
- 1 large potato, washed and peeled
- 1 medium golden or purple beetroot, washed and peeled (or pickled beets)

Cowan’s Garden Pepper Salt

2 tsp. Dr.
Cowan’s Garden Organic Three-Beet Powder
- 1 tsp. Dr. Cowan’s Garden Organic High-Protein Leaf Powder
- 1/2 tsp. Dr. Cowan’s Garden Organic Dandelion Powder
- 2 servings of cooked beef, lamb, or pork, diced
- 1 poached or fried egg

2 Tbsp. Dr.
Cowan’s Garden Olive Oil

1/2 tsp. Dr.
Cowan’s Garden Pepper Salt
- 1 Tbsp. apple cider vinegar
- 1 tsp. mustard
- Small handful chopped chives or green onions (optional)
- Small handful of fresh dill or parsley (optional)

Directions For Pytttipanna:
Peel and dice the onion and set aside.
Wash and peel the potato and beetroot.
Cut the potato and beetroot into smallish chunks.
Add the potato and beetroot chunks to a pot of water and steam or boil for about 15 minutes using moderate heat until soft. If using pickled beetroot, chop and set aside.
Remove from the heat and drain the water.
Add oil or ghee to a large frying pan or wok.
Sauté the onions, potato, and beetroot (or pickled beets) for a few minutes until the onions are tender.
Add vegetable powders and pepper salt and mix well.
Add your favorite cut of meat and stir. When you’re satisfied with the taste, remove from the heat and serve with the dressing and a poached or fried egg.
Directions For Dressing:
Add olive oil, apple cider vinegar, pepper salt and mustard to a small bowl and mix well.
Peel and chop the green onions and dill or parsley if you’re using them.
Add these ingredients to the dressing and stir.
Pour the dressing on top of the Pyttipanna and serve.
