Cilantro Lime Chicken

Fancy something nice to go with rice, tonight? Whip up this easy recipe in minutes with a few simple ingredients. You can use a rotisserie chicken, or shred some baked or roasted chicken leftovers. Although I prefer plain full-fat kefir yogurt due to its health benefits, feel free to substitute it with Greek yogurt or sour cream. If you’re not a fan of cilantro, parsley works equally well. The versatile tangy creamy dressing in this recipe is simple to make, and can be stored in the fridge for several days.

Ingredients
- 1 rotisserie chicken
- 1 garlic clove, crushed
- 1-2 limes, freshly squeezed

tsp. Dr. Cowan’s Garden Organic Ashitaba Powder

tsp. Dr. Cowan’s Garden Organic Kale Powder

tsp. Dr. Cowan’s Garden Pepper Salt
- 1 large bunch of fresh cilantro or parsley, finely chopped
- 1/2 cup full-fat kefir yogurt
- 1 cup rice, cooked according to package instructions
Directions
- Shred cooked rotisserie chicken into small pieces.
Put the shredded chicken in a bowl and set aside.
Peel and crush garlic.
Squeeze the juice of 1 lime, more if you like it super tangy
Add garlic, lime juice, olive oil, ashitaba powder, kale powder, pepper salt, cilantro, and kefir yogurt to a high speed food processor.
Blend for a few seconds until smooth.
Pour some of the dressing over the chicken and mix.
Serve the chicken mixture over rice or a green salad.
